Concept Brief

A refined Pina Colada reinterpretation without alcohol, built on real coconut, controlled pineapple acidity and warm tonka bean notes. Designed for elegant summer events and signature menus.

Ingredients

  • 70 ml Fresh Pineapple Juice (fine strained)
  • 40 ml Coconut Cream (unsweetened)
  • 20 ml Coconut Milk
  • 15 ml Vanilla–Tonka Syrup (house-made)
  • 10 ml Fresh Lime Juice
  • 2 dashes Saline Solution 10%
  • 30 ml Velvet Blunt Foam Base (optional)

Build & Technique

  1. Add all ingredients to shaker
  2. Shake hard 15–18 sec for full emulsification
  3. Fine strain into chilled coupe or tiki glass
  4. Add thin foam layer (6–8 mm) if using Ripple
  5. Apply Ripple print or minimalist garnish
