Concept Brief
A refined Pina Colada reinterpretation without alcohol, built on real coconut, controlled pineapple acidity and warm tonka bean notes. Designed for elegant summer events and signature menus.
Ingredients
- 70 ml Fresh Pineapple Juice (fine strained)
- 40 ml Coconut Cream (unsweetened)
- 20 ml Coconut Milk
- 15 ml Vanilla–Tonka Syrup (house-made)
- 10 ml Fresh Lime Juice
- 2 dashes Saline Solution 10%
- 30 ml Velvet Blunt Foam Base (optional)
Build & Technique
- Add all ingredients to shaker
- Shake hard 15–18 sec for full emulsification
- Fine strain into chilled coupe or tiki glass
- Add thin foam layer (6–8 mm) if using Ripple
- Apply Ripple print or minimalist garnish
